Recipe: Red Pepper, Walnut and Pomegranate Spread
This dip is known as Muhammara and is a staple appetizer in the Mediterranean. The best thing to do with this recipe is to make a large amount and jar leftovers for the rest of the week to enjoy. You then would have a delicious and healthy snack ready to go!
1.5 cups walnut, very finely chopped
3 red bell peppers
1/3 cup fresh bread crumbs
1/4 cup of olive oil
2 tablespoons finely chopped onions
1 tablespoon pomegranate molasses (gotta buy a bottle of this!)
3/4 teaspoon cumin
¼ teaspoon sugar
4 tablespoons red pepper paste
Freshly cracked pepper
Dash of cayenne (optional)
1) In a food blender, mix all the ingredients of walnuts, bread crumbs, olive oil, onion, pomegranate molasses, cumin, red pepper paste, red peppers, sugar, salt and cayenne. It should have a grainy texture.
2) Spread over serving dish and drizzle a little more olive oil. You can also garnish with pine nuts or parsley.
